As well as covering the basics of saké production, each year the seminar and tasting takes a different focus. Last year covered the significance of rice polishing, this year will look at the importance of water as a key saké-making ingredient. Given that the saké brewers come to London specially for this event, bringing examples of sakés with them that may not be available here, this really is a unique opportunity to discover the subtleties one of the world’s great drinks, which is starting to develop a presence on western markets.
