Sitting atop Arashiyama on the western edge of Kyoto, this brewery is surrounded by sources of pure, clear water and rich, fertile soil. Blessed with premium sake water and rice, the sweet and full-flavored Tanzan has become legendary among sake-lovers.
Five wells were dug at the site as soon as the brewery was established to tap into nearby water perfect for brewing sake. Said to come from the same water source as wells at Kameoka Castle, one of these brims with the purest water of the highest quality. Having earned the name Portending Great Treasures, water from this well has been exclusively used for the sacred process of brewing sake.
The brewery cultivates its own sake rice in local Kameoka paddies. Embodying the brew masters' passion for "perfecting water, polishing rice, and listening to the voice that emerges from the sake as it comes to life," this year's Tanzan yet again delivers a well-balanced charming taste and aroma. |
