Founded 130 years ago, this brewery has produced several famous sakes in its earnest pursuit of great sake making.
Tenju sake is made using melted water from the snowcap on Mt. Chokai. Given its belief that "sake brewing begins with the rice," the Tenju Brewery established the Tenju Sake Rice Research Association. For more than 20 years, this association has been conducting empirical research on organic cultivation practices to create better quality rice. In the bitter winter cold, brewers trained in traditional brewing methods adhere to the signature Akita techniques for producing a delicate sake with a mellow fragrance and flavor through the skillful use of rice and soft water. Thanks to the meticulous attention paid to each step of the brewing process, Tenju has been awarded numerous honors by various sake judging committees since the pre-war period. |
