Hayaseura : Miyake Hikouemon Shuzo Brewery

Hayase, Mihama-cho, Fukui Prefecture, a place of idyllic beauty located near the Five Lakes, once flourished as a fishing town. It is known for its eel, and the delectable aroma of local dishes wafts from the storefronts lining the road.
The quaint brewery has an air of traditional dignity derived from its 290 year history. The master brewer here is Norihiko Miyake, a man who, still in his 30s, is considered young for a master brewer. According to Miyake, "We aren't really thinking of increasing our production beyond current levels. Because this brewery is run by a family of three, our goal is to focus our energy on our current vintage of sakes, ensuring that they are appreciated by our customers and that we are making beverages that people will never tire of drinking. We want to make sakes that people know they can count on anytime, whether they're feeling happy, sad, or lonely."
Hayaseura takes a diligent and careful approach to sake brewing.
Junmaishu Hayaseura

A sake with a fresh, crisp mouth feel. Warming it enhances its sweetness and earthy flavor. It goes well with white fish.

Junmai Ginjo Hayaseura

This sake features a smoother rice than the Junmaishu. It always keeps you coming back for more.

Yamahai Junmai Ginjo Hayaseura

This sake has a fine, gentle aroma. It has notes of lactic acid which, rather than detracting from the flavor, make it an enjoyable sake that promises a full, mature flavor.
