Koshino Bairi Yuki Junmai Daiginjo (Organic)
With a reserved aroma and good flavor, this sake has a well-balanced acidity and sweetness. It almost seems to "disappear" down the throat. Made with Koshihikari rice, which lends an elegant flavor. This sake is not suitable for sashimi (raw fish) but is better paired with yakitori (broiled chicken basted with sauce) and stewed dishes with pronounced flavors.
Junmaiginjo Happo Nigorizake Yuki-Iro-Hanabi
A delightful little burst of flavor on the palette. Though light, it is delicious and possesses the well-defined umami and sweetness that characterize Japanese sake. Rice champagne! |

Organic Nigori Amazake
Delectable. Crisp, clean. A genuine amazake with a hint of coconut-like aroma and luscious subtle sweetness.
Niigata is home to many famous breweries and sakes. It would be no overstatement to say that one half all Japanese breweries are located in Niigata. I wonder just how many of them I would personally consider tasty.
I would recommend this Koshino-bairi. I think that the sincere philosophy on sake maintained by Mr. Shuhei Oguro, company president, is representative of the quality of the sake produced by this brewery. His positive attitude with respect to new ideas is admirable.
"Now we're producing an organic sake. Why not give it a try?" The brewer's invitation, brimming with confidence, resonated with my heart. |
