Kato Kichibe Shoten is an old and established shop that traces its history back 11 generations. In the past, the family was involved in money dealing and village leadership, with its head always having the first name Kichibe. This brewery's sake has continued to be used at important national occasions ever since it was used at the start of the Showa Period (1926-1989) in ceremonies related to the accession to the throne. Famous for being the first to put daiginjo-shu on the market, this brewery produces nothing but additive-free junmaishu (pure rice sake).
Using a ratio of 40% polished rice (probably the whitest sake rice in Japan) in its products, all of this brewery's sake is produced using yeast made on the premises. Determined to produce the most genuine of flavors, its sake is only put on the market after it has been aged at freezing temperatures for long periods of time. "Born" has won dozens of awards from liquor tasting competitions and fairs in Japan and overseas, is used at many countries state dinners and is recognized as being among the very best of Japanese sake. |
