Dewatsuru is located on the Senboku Plain in Akita Prefecture, one of Japan's leading grain-growing regions. The cold, crisp environment created by the region's deep winter snow is perfect for sake brewing, facilitating the production of vintage sakes.
Dewatsuru sake is characterized by a mellow flavor imparted by its low-temperature fermentation over a long period, wrapped up in an all-around smoothness. All of the workers at the Dewatsuru brewery come from the local area, including the master sake brewer to whom the traditions of Yamauchi toji (the master brewer from Yamauchi village, Akita Prefecture) have been passed down. This solidarity, combined with the brewery's own traditional techniques, is the key to the great sake they make. |
