This brewery, which produces Hatsugasumi refined sake, is located on the plains of Akino (present-day Ouda-cho, Nara Prefecture), a beautiful, scenic region east of the ancient city Asuka, which was well loved by the Manyo poets.
Kubo Honke Shuzo has dedicated itself to producing great sake for more than 300 years since it was founded in 1702.
Hatsugasumi is brewed to have a gentle fragrance, a light, lingering aftertaste, and earthy undertones. This makes it a fine accompaniment to a good meal, which really warms one up on the inside. You will find yourself drinking this sake one cup after another, with scarcely any negative aftereffects the next day.
This brewery is also one of the few distilleries in Japan that makes its own kimoto yeast starter.
Kimoto is a traditional brewing method passed down since ancient times in Japan. It takes advantage of the growth and transformation of natural microorganisms. The brewery's goal is to brew sake in a way that fully extracts the genuine flavor of the rice.
