About the KURAMOTO
The origins of Toshimaya go back about 400 years, when the founder Toshimaya Juemon began operating a combination liquor store and pub along the Kanda/Kamakura riverbanks of Edo (the present-day Kandabashi region). At the time, the materials being used to build Edo Castle were transported along the river from the Kamakura riverbank. With many samurai, artisans, and merchants gathered in the area, Toshimaya's shop thrived. Founder Juemon is said to be the first to have brewed shirozake, a sweet, white sake which was so popular during the Edo period that it sparked a special saying: "For mountains, it's Fuji. For shirozake, it's Toshimaya." Today, the brewery makes its shirozake using the same brewing methods it used back in the Edo period, and every year it presents some as a gift to the Imperial Palace.
In the early Showa period, the brewery was moved to its present location in the Higashimurayama district of Tokyo, and Toshimaya Shuzo was established. The brewery painstakingly brews its sake using water drawn from a well that reaches down 150 m to the underflow water from Mt. Fuji, using a carefully selected rice of a type that is preferred for sake making. The brewery has won numerous gold medals in the National New Sake Tasting Competition. The young brewers, including Haruyuki Ishii, who adheres to the Echigo toji school of sake making, are diligent brewers with a passion for sake. You are encouraged to try the rich aroma and flavor of "the sake of Tokyo."
