The Oguro Brewery has coined the term "Year of Initiation" in reference to the new vintage year commencing October 2004, which marks the establishment of its new values and ideals as a local Niigata sake brewer (not a sake maker).
The fundamental principles of this brewery are:
- A hands-on approach to brewing. A consistently obsessive stance coupled with action, all aiming to create a scrupulously superior product.
- Quality and brewing based on an original concept.
- Openness on the brewery floor and in the guest reception area to facilitate local communication.
- A maximum production of 3,000 koku of rice (180 liters per koku) and customer development.
