| The Mikawa Shuzojo brewery, the maker of Maibijin, is located on the east side of Fukui City, Fukui Prefecture. The owner of the brewery performs the role of toji himself. The sake is brewed using the abundant fresh water of the Asuwa River as well as traditional tools for brewing sake, including Japanese iron pots for steaming the rice and kibune to press the sake out of each bag of moromi. A succession of handcrafted process delivers sake with real heart. Through patient insistence on using local sake-brewing rice and yeast and fresh water from the well in the brewery, this brewery produces a deep and gently flavored sake featuring umami and sweetness. |
