Michizakura Shuzo is located in a mountainous region of Gifu Prefecture. It is a very small brewery, but continues to make Japanese sake according to traditional methods.
Recognizing that true micro-brew sake is a product of local ingredients, the brewery begins the sake-making process by cultivating the Gohyakumangoku rice that it uses for brewing. Its sake is made using rice that the brewery itself has carefully planted in the spring, weeded in the summer, and harvested in the fall. This allows the brewery to produce a high-quality product that retains the full flavor of the rice and has an elegant, pleasant aftertaste. Its goal is to brew a sake that can be enjoyed with a meal without clashing with the food served, but that still maintains a distinctive flavor of its own. |
