Located in Takehara, a city in southern Hiroshima Prefecture along the coast off the Seto Inland Sea, the Taketsuru Shuzo Brewery boasts a history of more than 270 years. Founded in 1733, the brewery remains a leader in the sake industry to this day.
Based on the concept that, "sake is not man-made," the Taketsuru Shuzo stands apart from standard sake brewing practices involving the artificial design of sake qualities and rigorous control and management of the brewing processes. Instead of blindly following trends, the brewery values tradition and the power of nature to create sakes that are incomparable to other brands.
The brewery focuses on three qualities for what it deems "true sake" : sake that is delicious served either warm or cold; perfectly accompanies all types of meals; and improves with age.
Taketsuru almost exclusively brews junmai (pure rice) sake. Avoiding the overly aromatic yeasts often used today, the brewery pursues the pure umami of rice with acidity and a smooth finish. With conviction about the inherent power of sake and a policy that rejects any tinkering during the brewing process, Taketsuru has managed to create a fully aged commercial product with its deep original color without any carbon filtering or skimming of sediment. With a distinctive taste that people either love or hate, those whose love for sake comes from a gut, rather than intellectual, reaction will undoubtedly fall in love with this sake.
