Yebisu Shuzo distillery commenced production of sake and shochu in the early Meiji Period (1868 to 1912), with the focus shifting solely to shochu in 1940. Since the 1950s, we have concentrated on aged shochu. Our distillery is located in Haki, 50km from Fukuoka City, in an area surrounded by mountains and marked by the Chikugo River, which flows along the border with Oita Prefecture. The Haratsuru Hot Spring is also nearby. The ample supply of underground water means that the area is also known for growing fruit such as Japanese persimmon.
Our approach to shochu production is based upon a blend of traditional technique and innovation. We focus on looking after our present customers and making the most of our small-scale, rather than trying to push too hard to expand the operation. The process of aging shochu occurs over several years and, for better or worse, it does not always produce the exact taste desired. Maintaining consistency in taste is a constant challenge. |
