The Kitsukura Shuzo brewery and distillery has been making sake and shochu in the Saku area of Nagano Prefecture for over 300 years. We pride ourselves on the fact that we have consistently striven to bring our customers only the best quality product.
Out of our desire to preserve the unique character of soba (buckwheat) for our soba-shochu, Toge, the only non-buckwheat ingredient is the kome koji (malted rice). By distilling this shochu at atmospheric pressure we maximize the distinctive buckwheat flavor. We aim to produce a shochu with an aroma and depth of flavor that will amaze our customers. In the meantime, by sourcing buckwheat from all over the country, we produce soba-shochu that reflects each of those grain-producing regions. Our desire to play our part with products that contribute to those regional economies has found favor near and far. |
