Furusawa Jozo is the only distillery in Miyazaki Prefecture that produces shochu in the dozo style of whitewashed building made using clay and plaster. Ever since the distillery was founded, we have used a kojimuro (special room to cultivate koji) and pots for small-batch fermentation. We carry out our distillation at atmospheric pressure to produce shochu that is true to the natural flavor of the ingredients. The distillery is found in Odotsu, a small fishing village sandwiched between Odotsu Harbor and the Hosoda River that flows from Takigahira. The local specialty of processed fish products using the likes of fresh bonito and tuna goes exceptionally well with shochu. |
