Miyazaki Prefecture stretches far from north to south. In the south it is mainly imo-shochu that is produced, with mugi-shochu or other varieties produced from grain being more prevalent in the north. Sato Shochu Seizojo is a small distillery located in Nobeoka City in the northern region of Miyazaki Prefecture.
The majority of this distillery's products are light and gentle, but Sato Seizojo also aims to create products appropriate for drinking with foods. The dedication to shochu of the distillery's president, who doubles as its master distiller, is there for all to see.
As clear as the river waters that flow beside the distillery, Ginnomizu is a mugi-shochu for which the moromi (main mash) is fermented at low temperature. Their marquee brand, Tennokokuin, focuses upon creating depth of taste, and in addition to the bright aroma of barley, it has no zatsumi, or off-taste, therefore producing a mellow umami flavor. This distillery also produces a range of varieties such as oak-aged kome-shochu, imo-shochu and kuri-shochu, reflecting the varied ingredients available in Miyazaki Prefecture. |
