 Yamatogawa started sake brewing in 1790. The brewery emphasizes on quality of rice and water. We cultivate and harvest Yamada-nishiki, considered the best quality rice for sake brewing, in our brewery-owned rice fields. The brewery also obtains rice from locally contracted farmers. They adopt highly skilled technique to realize the rice-farming with no chemical use or with reduced chemical use. The Iide mountains holding perpetual snow are located at the north end of the Aizu-basin and provide an ample of groundwater, providing us a full benefit for sake brewing.
