Mu sake is produced by Yaegaki Sake & Spirits, which was founded in 1666 in Harima-no-kuni, the current Himeji City of Hyogo Prefecture.
The brewery takes its name from the famous nuptial poem compiled in Kojiki, Japan's oldest extant chronicle.
The Yaegaki brewery continues to uphold a longstanding sake brewing tradition that draws on an artisanal attention to detail. Premium Yamada Nishiki sake rice is used, along with underflow water from the Hayashidagawa River, fed upstream by the Shikagatsubo waterfall. The other crucial element is the dedication of its toji, or master brewer, and brewery workers. Sake brewing traditionally takes place during the winter, relying on ancient weather patterns to help produce a taste that truly reflects the character of the land ? a taste that in turn has won the admiration of sake lovers around the world. |
