Suehiro Sake Co., Ltd. was founded in 1850, a period when the Edo Bakufu government was in decline and Japan was undergoing significant social and political changes. In the Meiji period, it became the first brewery in Fukushima Prefecture where the sake was brewed by a toji, or master brewer. In the Taisho period, the brewery tried brewing sake using the yamahai method discovered by Kinichiro Kagi (a method of brewing that did not require the sake starter to be manually smashed using poles), a tradition which has been passed down to the modern Suehiro's sake brewing. Today, the brewery is also engaged in organic rice cultivation. The brewery uses organic rice cultivated under contract by farmers in the Aizu region, as well as the rice the brewery workers plant and harvest themselves. Their motto is "From Aizu rice, Aizu water, and Aizu people." The brewery has great respect for history and tradition but also keeps up with the changing times, and these traits have allowed it to achieve the unique flavor of Suehiro sake.
